1. Easy-Cheesy Onion Dip
Combine 1 cup mayonnaise, 1 finely chopped medium onion, and 2 cups shredded mozzarella in a 1½ quart baking dish. Bake at 350° F for 25 minutes, or until lightly browned. serve with whole grain crackers.
2. Reuben Dip
Preheat oven to 350° F. in a large bowl, combine 8 oz softened light cream cheese, ½ cup light sour cream, one cup drained sauerkraut, ½ lb corned beef finely chopped, ¼ cup thousand island dressing, and one cup of shredded swiss cheese. Transfer to small casserole dish, cover with foil, and bake for 30 minutes. Remove foil and bake 5 more minutes. serve with rye crackers or rye cocktail bread.
3. Fruit Salsa
Chop ½ lb strawberries, one peeled kiwi, one peeled gala apple, and one banana. Combine fruit in a small bowl with ¼ cup fresh lemon juice, 2 tbsp sugar, ½ tsp cinnamon, and ¼ tsp nutmeg. Cover and refrigerate for at least one hour. Serve with cinnamon pita chips.
4. Hot Poppin’ Dip
In a medium bowl, combine 8 oz softened light cream cheese, 1 drained 4 oz can green chiles, ½ cup light mayonnaise, and depending on how spicy you like things, 2 to 4 seeded and finely diced jalapeño peppers. (Half-can or all of a 4 oz can chopped jalapeños). spread evenly into small casserole dish. In a small bowl, combine ¼ cup grated parmesan cheese, ¼ cup panko breadcrumbs, and 2 tbsp melted butter. Sprinkle crumb mixture evenly on top of cheese mixture. Bake at 350° F for 30 minutes or until browned and bubbly. serve with tortilla chips.
5. Italian Bean Dip
Drain and rinse one 15 oz can cannellini beans. Add beans, 2 cloves garlic, 3 tbsp fresh lemon juice, 1/3 cup olive oil, ¼ cup chopped italian parsley, and 1 tsp (dry) italian seasoning in bowl of food processor. Pulse until dip is desired consistency. serve with breadsticks and veggies.
6. Fruity Fun-due
Mix 1 cup light sour cream, 2 tsp orange juice, and 1 ½ tsp orange peel with a whisk in a medium bowl. serve with toothpick skewered fruit and a small dish of turbinado (raw sugar) or brown sugar for dipping.
