Chocolate Strawberry Banana Yogurt Clusters
Serves 12
Ingredients
2 cups strawberries chopped
1 large banana chopped
½ cup plain full-fat Greek yogurt
1 tablespoon honey
1 cup dark chocolate chips
1 tablespoon coconut oil
Toppings: Chopped roasted and salted peanuts for sprinkling
1. Add fruit, yogurt, and honey to a large bowl and gently stir until combined.
2. Scoop mixture onto a parchment-lined baking sheet and place in the freezer for about 1 hour.
3. Melt your chocolate chips and coconut oil in 30-second increments in the microwave or using a double boiler.
4. Remove the yogurt clusters from the freezer and coat each one in chocolate. Pro tip: I don’t recommend dipping the clusters into the chocolate, the cold cluster will cause the chocolate to harden and make it very difficult to work with.
5. Quickly sprinkle with chopped peanuts before the chocolate hardens.
6. Place clusters in the freezer until chocolate has fully hardened and enjoy!
Frozen Banana Snickers

Serves 2
Ingredients
1 banana
2 teaspoons date caramel sauce
2 teaspoons peanut butter
1 tablespoon chopped peanuts
2-3 tablespoons dark chocolate chips
¼ teaspoon coconut oil
1. Slice banana in half and then split down the middle so you have four sections. Add to a parchment-lined baking sheet or dish.
2. Spread a layer of the date caramel sauce on top of the banana slices and then spread on a layer of peanut butter.
3. Sprinkle with chopped peanuts.
4. Melt chocolate chips with coconut oil in a microwave-safe bowl in 15-second increments, stirring in between until melted. Drizzle melted chocolate over banana slices.
